I really am!
And that's why I've not been here much lately, dear readers of mine. In addition to packing and moving to our little cabin (which is difficult enough on its own since we are downsizing and I often have to think twice and sometimes three times to determine what to keep or get rid of) Mike's newly discovered diabetes has me working overtimeplus in keeping him fed healthy food. I'm up for the challenge and during any other time would be enjoying it immensely. But we're in the last throes of packing and moving and I already have very little time on my hands. Mike doesn't have time to cook for himself with the hours he works, so I am devising a sugar-free, gluten-free diabetic diet for him and am in the thick of figuring it all out. Fortunately, the diet is pretty much what I already eat for the most part, but I have to fine-tune it to include meat for him and also figure out how to create breakfasts he can grab from the frig in the morning and lunches he can take with him on the run, along with two snacks to have during the day. Since some of my kitchen stuff is at the cabin and some is at our current house, my head feels like scrambled eggs. Here is a recent picture of me:
The good thing is that Mike has taken on the eating challenge with gusto and has turned a corner I think. Since he is newly diabetic, he wants to do all he can to turn it around. He's already losing weight and soon his taste buds will actually change and he'll prefer decent food over fast food! I hope.
I want to send out a BIG thank you to Jen W. for sending me lots awesome information on ingredients and recipes and for just being so helpful during this transitional time. Thank you again Jen; you're a life-saver.
In the meantime, we have pretty much decided to move to the cabin before our house sells just so that it will stay neat and tidy while on the market. Our commute will be longer, but we'll drive in together and Mike will pick up his truck near where I work. So... we could actually move there within the next month. It's exciting, but stressful too. We'd not planned to live there while I was still working, but sometimes you gotta go with the flow.
I've had lots of other stuff to write about and photos to add, but have just been too dang busy. Things will calm down after we move, but until then I will just add something quick here as often as I can while dashing through.
