I made these last week and totally fell in love; I just had to share. They are soft and chewy and if you don't eat grains, you'd swear they were bread! I was never a big bread freak, but occasionally miss certain goodies. I saw these online and decided to give 'em a try. That are fabulous. FABULOUS! And grain (and gluten) free! This version is high in saturated fat because it uses butter, but you can use olive oil instead - which I'm going to try next. But this version was perfection as far as taste and texture goes. Mike totally loved them. And they are so easy to make. They're not something I'd eat all the time, because nutrition-wise they don't add up to a lot, but they are harmless in my opinion. And they're sure good for the taste buds. I put the ingredients into a nutrition calculator just to see how many calories each had and it came to 95 calories each if you make 24 buns. I think that's how many I made, but I didn't count. It was a lot, I remember.
